Zucchini Penne Pasta

 500 g Bio XXI Andean Penne Pasta
 3 kg Zucchini
 2 White Onions
 2 Garlic Cloves
 700 g Mozzarella
 1 tsp Rosemary
 Salt & Pepper to taste
 Cayenne Pepper (optional to taste)

Cook the Bio XXI Andean Penne pasta according to the instructions on the box.

Rinse and clean all vegetables

Grate the cheese

Peel the garlic and onion and chop them very finely.

Cook them with a little water until they are tender and transparent.

Peel and remove the zucchini skin and cut into small squares, cook them with very little water until they are al dente.

Blend half of the cooked zucchini and mix with the onions and garlic.

Season it with salt, pepper, rosemary and the optional cayenne.

Return the pot to medium heat and bring the sauce to a boil.

Take it off the heat, mix in the pasta and stir until all the ingredients are well mixed and incorporated.

To finish, add the cheese and the rest of the pumpkin and give it a final careful turn before serving.

Chef Tip: When serving, sprinkle a little chopped parsley or chives as garnish.
