Tomato and Basil Pasta

Yields3 Servings
 250 g Bio XXI Andean Fusilli Pasta
 2 tbsp Olive Oil
 1 tsp Salt
 ½ tsp Black Pepper
 3 Garlic Cloves (thinly sliced)
 1 Red Onion (fineley chopped)
 120 g Carrots (finely diced - brunoise)
 120 g Celery Root (finely diced - brunoise)
 100 ml Red Wine (vegan)
 400 g Canned and Blended Tomatoes
 80 g Basil Leaves (rinsed)
 ½ tsp Smoked Paprika (optional)
 12 tsp Brown Sugar (to taste)
 Fresh Basil leaves for garnish

Cook the Bio XXI Andean Fusilli as per instructions on the box.

While the pasta cooks, in a large skillet over medium high heat add olive oil and cook the garlic for one minute, add the onion and cook until soft and translucent.

Next add the carrots with the celery root, season it with salt and pepper, cook it for about 2 minutes.

Add the vegan wine, blended tomatoes, brown sugar, smoked paprika and basil leaves, allow to simmer for 10-15 minutes until reduced.

Mix the pasta with the sauce.

Sprinkle some fresh Basil leaves on top and serve!
