Spaghetti Bolognese a la Samantha Joy Lockhart

Yields1 Serving
Bolognese Sauce
 1 Onion (diced)
 2 Carrots (peeled and diced)
 1 Celery stalk (finely chopped)
 12 tsp Garlic (minced or grated)
 500 g Minced Beef (Sam use Angus Beef)
 1 Can Whole Tomatoes
 50 g Italian Tomato Paste
 ½ cup Red Wine
 250 ml Knorr Beef Stock Pot (or any other Gluten Free Beef Stock)
 3 tbsp Olive Oil
 3 tbsp Sweetener (Sam uses a home made date paste)
 Salt & Pepper (to taste)
 Oregano
 Fresh Parsley (rinsed and picked) - Garnish
 Cheese or Parmesan (grated) - Garnish
For Cooking The Pasta
 250 g Bio XXI Andean Spaghetti (one full packet)
 3 l Water
 Olive Oil (to taste)
 Salt (to taste)

Cook the Bio XXI Andean Spaghetti as per instructions on the box (2-3 liter of boiling water, salt, olive oil, and cook until al dente).

On completion, remove the pasta from the pot and drain, running warm water through it to remove excess starch and prevent sticking.

The Bolognese Sauce

In a large saucepan, add olive oil, diced onion, carrot and celery and saute until golden brown.

Add the minced garlic and deglaze the pan with the red wine.

Add in the beef mince, seasoning (salt/pepper and oregano) to taste and stir until cooked through.

Once mince is cooked all the way through, add tomato paste, tinned tomatoes and beef stock to the pot.

Break up the whole tinned tomatoes with a wooden spoon and let the dish simmer for about 15 to 20 min, adding sweetener of choice towards the end.

Serve the Bio XXI Andean Spaghetti with Bolognese sauce and fresh parsley and cheese.

Gluten Free Beef Stock:
I use Knorr beef stock pot- Did you know that some stocks are not gluten free? As far as I know (and according to their website) Knorr Beef Stock Pot is Gluten Free.

Gluten Free Seasoning:
I use Ina Paarmans spices as they are also GLUTEN FREE

Making Date Paste:

Date paste sweetens naturally while adding fibre to the diet and will not spike blood sugar, so great for diabetics too.

Easy to make by cooking up pitted dates with 2 cups of water and blending.
