Quinoa Burger

Yields8 Servings
Burger Buns ( 8 pieces)
 300 g Bio XXI Quinoa Bread Premix Flour
 150 ml Soy Milk
 90 g Mashed Potatoes
 150 ml Warm Water
 30 ml Vegetable Oil
 6 g Salt
 30 g Sugar
 6 g Dry Yeast
 Chia and / or Sesame Seeds (for bun garnishing)
Quinoa Burger Patty (8 pieces)
 200 g Bio XXI Quinoa Nugget Premix
 75 g Carrots (grated)
 ½ tsp Cumin
 1 tsp Salt
 3 tbsp Coriander (Fresh and Chopped)
 ½ tsp Cayenne Pepper
 300 ml Water
 80 g Bio XXI Quinitos - Oregano Curls
 200 ml Vegetable or Olive oil (for frying)
 Cheese slices (to cover 8 burger patties)
Garnish - Optional as per your preference
 Salad Leaves
 Onion Rings
 Mayo of your choice
 Gherkins
 Tomato Sauce

Preheat oven to 180 degrees

In a bowl, mix the warm water with the milk then add the yeast and sugar and with the help of a fork beat until all the ingredients are dissolved and combined.

Let it rest for a few minutes while you do next step.

In another bowl, mix the flour, salt, mashed potatoes and oil.

Pour the liquid mixture from step 2 into the bowl and use a wooden spoon to stir the mixture vigorously until it forms a semi-liquid mass.

Use a silicone spatula to get to the edges and the bottom to ensure that all the ingredients are mixed and combined.

The dough will be semi-liquid with slightly sticky texture.

Grease an oven tray with oil.

Dived the dough into 8 (eight) equal pieces (around 80 g each).

Sprinkle some Bio XXI Bread Flour in a bowl.

For each piece of dough, place it in the bowl and sprinkle some flour on top and with your hands, shape the pieces into round balls and place them on the oven tray.

Brush off excess flour.

OPTION - Chia or Sesame Seed Bun Garnishing:
Brush the buns with a mixture of beaten egg and water OR soy milk mixed with olive oil then sprinkle Chia and / or Sesame Seeds on top of the buns .

Cover the buns with a cloth and put them in a warm place for 20 minutes, or until they risen to twice the size.

Bake the buns for 15 minutes at 180 degrees Celsius.

There after lower the heat to 170 degrees Celsius to finish cooking. Test the buns with a stick and ensure they are cooked through.

Quinoa Burger Patties

Grind the Quinitos - Oregano Curls in a blender or food processor until we obtain a course flour, like bread crumbs.

In a bowl, mix the Bio XXI Quinoa Nuggets premix with salt, cumin, carrots, coriander.

Add the water and mix well before letting it rest for about 5 minutes until all the ingredients are re-hydrated.

Add in the course Oregano Curl Quinito´s flour and mix.

Shape to the mixture into 8 (eight) hamburger patties using your hands. Each patty will be roughly 80 grams.

In a frying pan, fry the burgers (on a medium heat) on both sides until they are golden brown and cooked through.

OPTIONAL - Once they patties are golden brown, put the cheese slices on the patties and cover the pan until melted.

Cut the burger buns in half, garnish to your liking and add the patty.

Ready, steady, SERVE!
