Quinoa Bagel Sandwiches (6 pcs)

Yields6 Servings
 300 g Bio XXI Bread Premix Flour
 8 g Salt
 10 g Sugar
 60 ml Warm water
 60 ml Soy Milk
 40 ml Vegetable Oil
 5 g Dry Yeast
 25 g Mashed Potatoes
 Chia Seeds (for Bagel garnish)
 Sesame Seeds (for Bagel garnish)
 Bicarbonate Soda (for boiling the Bagels)
 Brown Sugar (for boiling the Bagels)
 Sandwich filling of your choice!
Baking The Bagels!

Dissolve the yeast and the sugar in the warm water.

In a large mixing bowl, mix the Bio XXI Bread Flour and the salt.

Form a whole in the center and add the mashed potatoes, the yeast mix, the oil and the soy milk.

Whisk the mixture until is has combined and you have a semi-sticky dough.

Sprinkle some flour on a tabletop and knead the dough until you get a manageable and non-sticky dough. It should take about 3 minutes.

Tip: Use some oil on your hands so the dough doesn't stick to your hands.

Let the dough rest and rise until double in size, approx. 30 mins.

Prepare a baking try and brush it with oil.

Sprinkle some more flour on the table top, knead a little more and divide the dough into 6 equal pieces, about 90 gram each.

With a little oil in your hands, roll each piece into a ball and make a hole in the middle, just a little larger than your thumb.

Finish each roll by making them into a doughnut shape and placing them on the baking tray.

Note: The hole in the middle with shrink during baking but make sure the hole is large enough so it doesn't close up.

Brush the Bagels with some oil and let them rest again until double in size, approx. 30 minutes.

While the Bagels are resting, preheat the oven to 180 degrees Celsius.

Place a place a pot of water on the stove, mix in the bicarbonate soda and brown sugar and bring to the boil.

Cook the bagels for about 1 minute per side, taking them out and placing them on a plate to dry while the rest of the bagels are cooking.

Brush the Bagels with oil or syrup and sprinkle the Chia and Sesame seeds over them.

Bake the Bagels in the oven for approx. 20 minutes.

TAke them out and let them cool down so the crust is forming before we go to the sandwich step.

Sandwich Filling Options

Cut the Bagels in half and on the bottom part, and spread the filling of your choice.

A vegan suggestion: Pesto, roasted Tomatoes, avocado smash, and micro greens.

A vegetarian suggestion: Cream cheese, avocado slices, tomato slices, and some micro greens.

Place the top back on and enjoy!
