Onion & Mushroom Pasta

Yields4 Servings
 400 g Bio XXI Andean Penne Pasta
 2 White Onion (cut into medium thick julienne strips)
 4 tbsp Butter
 1 tbsp Brown Sugar
 1 cup Red Wine
 250 g Mushrooms (cut in strips)
 2 Garlic cloves (chopped)
 1 tsp Thyme (or to taste)
 ¼ tsp Cayenne Pepper (optional for a bit of bite)
 1 ¼ cups Thick Cream
 ¼ cup Gouda Cheese
 ¼ cup Parmesan Cheese
 Salt & Pepper to taste

Cook the pasta according to the instructions on the box.

While the pasta is cooking, put half the butter in a sauce pan and fry the onion strips together with the sugar until translucent.

When the onions are tender, add the wine and let reduce until evaporated. The onions should be purple and caramelized.

While the onions are caramelizing, use the rest of the butter to sauté the mushrooms, garlic, thyme, and cayenne pepper.

When the mushrooms are tender, add the heavy cream, the cheeses and season with salt and pepper. Stir and make sure the mushrooms are well coated in the cream.

Add the caramelized onions and give it a quick stir.

Drain the pasta and pour into the sauce pan with the creamy mushroom and onion sauce, give it a nice stir to coat all the pasta and dish up!
