
Preheat the oven to 175 degrees Celsius.
Grease a 22 cm square baking pan.
Beat sugar and butter together in a mixing bowl using an electric mixer until light and fluffy.
Pour in the eggs and the vanilla extract and beat until fluffy again.
Sift flour and baking powder together in a separate bowl and add to the eggs and sugar mix.
Pour in the milk, lemon zest, and lemon juice and mix until you achieve a smooth batter.
Spoon the mixture into the prepared baking pan.
Bake the lemon cake for about 35 minutes (or until a toothpick stuck into the cake comes out clean).
Let the cake cool off a little before serving!
