Fluffy Pancakes from Bio XXI Bread Mix

Yields1 Serving
 320 ml Bio XXI Gluten Free Bread Flour Premix
 1 tsp Baking Powder
 ½ tsp Baking Soda
 ½ tsp Sea Salt
 2 Eggs
 2 Ripe Bananas
 240 ml Milk (or Soy Milk or Almond Milk)
 1 tbsp Extra Virgin Olive Oil
 1 tsp Vanilla Extract
 1 tsp Ground Cinnamon
 Olive Oil or Butter for frying
Serving Extras for a little Sunday Decadence
 Fresh Berries, and/or
 Cream, and/or
 Ice Cream, and/or
 Maple Syrup

In a medium mixing bowl, mix the Bio XXI Bread Flour, the Baking Powder, the Baking Soda, the salt, and the ground cinnamon. Mix the dry ingredients well.

Mash the bananas into a fine liquid mash.

In a large mixing bowl, beat the eggs, then add the mashed bananas, add the Vanilla extract, the olive oil, the milk and mix well.

Slowly mix in the dry ingredients into the mixing bowl with the beaten eggs, bananas and vanilla. Mix well.

Let the mixture stand for 5 - 10 minutes.

Add some butter (or olive oil) to a medium hot frying pan and portion up pancake mixture for desired size. Fry until golden on both sides and cooked through. Repeat until all mixture is done.
