
In a medium mixing bowl, mix the Bio XXI Bread Flour, the Baking Powder, the Baking Soda, the salt, and the ground cinnamon. Mix the dry ingredients well.
Mash the bananas into a fine liquid mash.
In a large mixing bowl, beat the eggs, then add the mashed bananas, add the Vanilla extract, the olive oil, the milk and mix well.
Slowly mix in the dry ingredients into the mixing bowl with the beaten eggs, bananas and vanilla. Mix well.
Let the mixture stand for 5 - 10 minutes.
Add some butter (or olive oil) to a medium hot frying pan and portion up pancake mixture for desired size. Fry until golden on both sides and cooked through. Repeat until all mixture is done.
