Chocolate Brownies (Gluten Free)

 75 g Bio XXI Gluten Free Bread Flour Mix
 300 g Eggs (approx. 6 eggs)
 200 g Sugar
 300 g Butter
 250 g Medium Dark Chocolate
 25 g Cocoa Powder

Melt the Butter and the Chocolate separately.

TIP: To melt the Chocolate without burning it use indirect heating / boiling: Put the Chocolate in a small pot (or pan) that fits into a larger pot containing boiling water.

In a bowl, mix the Eggs and the Sugar until you get a creamy mixture.

Pour the melted Butter and the melted Chocolate and mix well.

Add the Bio XXI Gluten Free Bread Flour and the Cocoa Powder and mix until all lumps are gone.

Grease a baking pan (roughly 30cm x 40cm) and cover the bottom and sides with baking paper or waxed paper.

NOTE: The brownie almost double in thickness as you bake it so make sure the tray is deep enough for that.

Pour the mixture into the Baking Tray and smooth it out to an even thickness.

Bake the Brownies in 170 C degrees until baked through (approx. 25 - 30 minutes, depending on thickness)

TIP: Test with a toothpick if it is ready. There should not be any mixture sticking to the toothpick.

Let the bake cool down before cutting into squares or rectangles in the size you prefer.
