
Cook the Bio XXI Andean pasta according to the instructions on the box (about 8-12 minutes for al dente).
Clean and slice the mushrooms.
Heat a frying pan, add the butter and the mushrooms.
Cook until the mushrooms are browned and tender.
Remove from the frying pan and put the mushrooms in a bowl.
Using the same frying pan, heat up some more butter.
Once butter is melted, stir in the cream slowly.
Let it simmer until it thickens.
Once the cream has thickened, add the pasta, the blue cheese, mushrooms and seasonings.
(Keep a few mushrooms and some cheese for garnish)
Stir carefully (so you don't break the [pasta) until all ingredients have combined and the pasta is well coated.
If you want a thicker sauce, add more cream.
Serve the pasta on a plate or in a bowl.
Garnish with the kept aside fried mushrooms and blue cheese!
